Peanut Butter Banana Coffee Muffins

I think these are all of my favorite things rolled into one muffin. Coffee. Peanut Butter. Banana. Chocolate. I think they only thing missing is caramel but that’s a different story. I love how quick and easy these are to make! Smash everything into a bowl and voila! Waiting for them to bake is literally the hardest part. These make great use of your brown bananas (if you aren’t freezing them for my mocha protein bowls!). You can also easily substitute the chocolate chips for nuts to make these slightly healthier and remove some of the sugar content. Happy muffin eating!


Peanut Butter Banana Coffee Muffins

Serves 12

Ingredients

3 brown bananas, mashed

⅓ cup maple syrup

1 teaspoon vanilla extract

3 eggs

½ cup peanut butter (or nut butter substitute)

¼ cup coconut flour

2 teaspoons instant coffee grounds

½ teaspoon baking soda

½ teaspoon baking powder

1 teaspoon cinnamon

pinch of salt

½ cup Chocolate Chips

Preheat your oven to 350 degrees.

Mix bananas (mashed), syrup, vanilla and eggs in a large bowl. Add eggs and whisk until mixed. Some clumps from the bananas is allowed.

Add your dry ingredients and mix until blended.

Fold in chocolate chips.

Line a muffin tin with liners and scoop in to 12 equal portions.

Bake for 25 mins and let cool on a wire rack at least 15 mins.

Serve warm or store in a refrigerator after they are completely cooled.
