PB Banana Donuts

SO many of you have been asking for this recipe so I’m giving it a share. No reason to hold this one to myself, right?! Yes they do have sugar in them, but for a gluten free donut, they bake perfectly and the flavor is unreal! Total time to bake and frost is under 30 mins – plenty of time to do it in the morning and enjoy with a cup of coffee.

Preheat oven to 350 degrees. Place the flour, sugar, baking powder, baking soda and salt in a large bowl, whisk to combine. Set aside.

In a smaller bowl, add in the remaining ingredients, whisk to combine. Add to the dry ingredients and mix until just combined. Fill greased doughnut tin ⅔ the way full with batter. Bake for 10 minutes, let doughnuts cool for 5 minutes in the pan, let cool completely on a wired rack.

For the glaze:

Whisk together the peanut butter, melted butter and sugar. Whisk to combine until smooth.

Dip doughnut tops into the glaze. Top with chocolate chips, if desired, serve and enjoy!

1½ Cup gluten free flour

¾ Cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

¼ teaspoon salt

3 medium sized bananas, about 1.5 c mashed

¼ Cup oil (I used avocado oil blend from Chosen Foods)

1 teaspoon vanilla extract

1 egg, lightly beaten

6 tablespoons peanut butter (chunky or creamy)

2 tablespoons butter, melted

2 tablespoons powdered sugar
